Do you have a favorite go-to lunch. I do. My friend and I do. We call it our sandwich. I’m not sure how our sandwich got started but it’s evolved along the way. It’s not for everybody. Not everyone wants a sandwich filled with veggies. We say things like “can you come over I have everything to make our sandwich?” and “we could go out to eat or we could just make our sandwich”. It’s that good. At least to us.
There are 6 basic ingredients in our favorite sandwich. Rye bread, coconut oil, avocado, garlic, carrots and beets. Without them you can’t call it our favorite sandwich. Today I made it and I also added hummus, homemade sauerkraut (more on that in an upcoming post), spinach and pea shoots. I am in love with pea shoots these days. Probably because they are the first produce out of my garden. And they taste good. Always important.
Here is how we make it. Try it out but make it your own. I dare you. Don’t like garlic, no problem, don’t use it. Don’t like avocado, use mayo instead. Experiment with your favorite ingredients but keep it fresh. Use veggies you like. Maybe tomato instead of beets.
To make 2 sandwiches (meals are so much better with company):
- Grate a carrot and a beet. Or chop up your favourite veggies.
- Mash 1 avocado with 1 clove of garlic.
- Toast your favourite bread and spread with a little coconut oil (or margarine or butter), hummus and avocado. You could use a wrap, pita, etc.
- Layer carrots and beets. Any other veggies.
Done. Simple. Tasty. Healthy. I promise you won’t regret it. You may need to chew some gum though. Raw garlic. Just saying.
